This is a Sandals St. Lucia inspired frozen mudslide recipe made WITHOUT ice cream. Patty and I went to Saint Lucia for our honeymoon and easily drank two frozen mudslides a day on the beach. They were so refreshing, really simple, and honestly tasted like they were made WITH ice cream.
The best part is this frozen mudslide isn’t half as bad for you as your typical mudslide made with ice cream. With under 350 calories, I wouldn’t necessarily call them “healthy” but a much better alternative to drinking liquid ice cream on a hot day (which I’m not entirely opposed to either).
How to Make a Frozen Mudslide
All you need is vanilla vodka, coffee liquor (Kahlua), Irish cream (Bailey’s), ice, and optional whipped cream or Cool Whip. Blend until smooth and creamy and serve, just like a chocolate frappe. After having about 12 of these on our honeymoon (and carefully watching the bartenders work their magic), I was blown away by how simple the recipe actually was.
Can I add Ice Cream?
Now obviously, if you add Milky Way ice cream to this recipe, it’s going to be out of this world good and really creamy, however, you will be surprised by how delicious this simple concoction really is on its own. If you do add ice cream, you will need less ice as you’ll gain a more creamy texture from the ice cream itself.
Presentation and Garnish
Serve in a frosted hurricane or pint glass drizzled with chocolate syrup to keep mudslides frozen longer. I topped mine with a little Cool Whip and sifted some cocoa powder over the top. This part is optional, but looks fantastic and adds a touch of creaminess.

A healthier frozen mudslide made without ice cream. All you need is vodka, coffee liquor, Irish cream and ice.
- 2 ounces vanilla vodka
- 2 ounces Kahlua coffee liquor
- 4 ounces baileys irish cream
- 2–2 1/2 cups ice
- Optional Cool Whip or whipped cream and cocoa powder for top
- Combine all ingredients in a blender. Blend on high for 20-30 seconds until the ice is smooth and the mudslide has thickened. You don’t want it to be too granular. Add more ice if the mudslide is too thin.
You can add 2 scoops of ice cream to this if you would like. If you do add ice cream, you will need less ice as you’ll gain a more creamy texture from the ice cream itself.

Can you make these ahead ofttimes ( fora large group) and keep in the freezer for a few days?
This sounds perfect to add some water to get the proper Brix % then put in a slushy machine.
